Father Jaillet came to South Texas from France. When Bishop Dubuis, of the mother Diocese of Galveston, visited France, he recruited volunteers from among the priests of France to come to Texas to do missionary work Father Jaillet responded, along with seven others, arriving in Galveston in 1866. Bishop Dubious assigned him to San Diego, Texas. The young deacon who had also arrived with him and who was also assigned to San Diego, became seriously ill and died a few days after his arrival in Corpus Christi. Father Jaillet arrived in San Diego, not able to speak either Spanish or English, but quickly learning both. He later was transferred to Corpus Christi as pastor of St. Patrick’s. Before leaving the Vicariate to assume his new Episcopal duties as Bishop of Mobile, Bishop Manucy appointed Father Jaillet as Administrator of the Vicariate, a role he continued in until the appointment of Bishop Peter Verdaguer in 1891 as Bishop of the Vicariate of Brownsville.
